Food in the Middle Ages

Salmon with Wine and Ginger Sauce

In the Middle Ages wine was often used in cooking so here we have included a typical version of a medieval recipe which lists wine in its ingredients.

Ingredients
2 salmon cutlets
½ cup white wine
½ a small onion
A drop or two of white wine vinegar
A pinch of ground ginger
Oil

Cooking Instructions
First very finely chop about half an onion. Then pour the white wine into a small saucepan and add the finely chopped onion. Now simmer until the onions are tender and the wine has slightly reduced. Then add the white wine vinegar and a pinch of ginger, and set to one side.

After this heat a grill or grill pan until medium hot; meanwhile take the salmon cutlets and brush each side with oil. Then, turning once, grill the salmon on both sides until cooked through.

Serve each piece of salmon with some of the wine and ginger sauce spooned over the top.
